racing is all about control and knowing exactly what your gamepad does to your car. i suck at racing.
i think what attracts me most is how much fun it is. gameplay above everything. i don't care about music as long as it isn't outright shitty (eg hip hop.) graphics mean pretty much nothing to me. balance is important, but not to the point that everything with a tier list would suck.
i love Xmen VS Street Fighter just because it's the riskiest game EVER. one hit and you're out. i like SFA3, even though i don't know much about it, just because it's fun to play Gief in it. same goes for MVC1. i like TTT because it's usually fun given character variety. (not true in Manila!) spacing wars are exciting. i like Starcraft because it's so extremely huge. it's so deep, and there are about 500000 ways to play, and you can't treat every opponent the same way. it's balanced and it leaves nothing to leveling up and random damage. i love Super Bomberman 2 on the SNES because it's crazy, fast, and very easy to learn. i love Ninja Gaiden Black. great controls, good combo system, great level design, and very challenging.
OTOH i thought T5 was pretty good at first, but then the tier whores started coming out and it became more boring than Manila's TTT. and i haven't gotten into DR because i got too turned off.
games that are too heavily anime-inspired put me WAY off. GG, Melty Blood, etc are all on my ignore list just because of that. i don't know why, so don't ask.
also, time being as important than skill is shit in any game IMO.

Gameplay is all I care about. As long as it has great playability, I'll play it.
About graphics, I'll put it this way. I'll play Super Street Fighter 2 Turbo over Dead or Alive: *insert qulaifier here* anyday of the week. I still think it's an outrage that they picked DoA as the single fighting game in WCG.
I also like fast-paced action games. Or anything dynamic. This is why I'd rather play action RPGs than turn-based RPGs (though some of them I did like). Racing, hell yeah. Action platformers, you got it. Shooting, I'm there. Dancing, turn the music up. RTS, give me time to get back on my feet and let's play.
I'm really not into 3d fighters, so I can't say anything about that.
Music is just a minor addition in my book. Still, it's not bad to have an awesome soundtrack (3rd Strike, GG, etc).

I won't go as much as say that graphics don't really matter to me, because it does. For me, graphics work by drawing my attention and let's me say, "Hey, that's cool". Graphics go as far as that only.
Gameplay certainly forms the bulk of my decision in whether a game is good or not. I sure enough people have said something about gameplay so just6 pick something from teh above. Chances are, I feel the same way. For cosole RPG's, I choose story over gameplay.
Fave genres would probably be shmups (I suck though), beat 'em ups (I suck more though), 2d fighters (not very good though), shooting, rhythm games (guitar, drums, DDR, whatever), sRPG's (Nippon-Ichi mostly though).

You can go back and play T5 at the arcades now. Almost all the characters are being used. There are still Steve, Law and Paul scrubs but what can you do about them?
I'll elaborate on what keikun said: No, I don't play Oblivion because it's a TES game. I sort of like free-roam non-linear exploring games like the The Elder Scrolls series and Grand Theft Auto 3+ series.
(That reminds me, buying a ship in TES:Daggerfall was very funny, you could teleport to it from anywhere, that makes it far more useful than a house.)
As for Civilization I play it because it's deep, strategic and addictive. Turns require a lot of planning and what the empire looks like 100 turns from now would be all my fault.
That being said, in any game (especially RPG's and Strategy games) I'd rather have control of all the characters / everything (except the fact that units auto-attack in say, Starcraft).
